  甘藷、紅龍果富含豐富之營養及類胡蘿蔔素、花青素及甜菜紅素,質地、口感為廣大消費者所喜愛,惟因水分含量高、營養豐富而不耐貯存,影響其產銷及市場發展。本研究團隊利用組合加工技術,開發甘藷及紅龍果兩種農產加工品,成果包括:

  1. 甘藷、紅龍果飲品、果泥、果醬、果乾、餡料。

  2. 冰烤甘藷、冰磚(甘藷、紅龍果)。

  3. 甘藷即食沖泡粉(單一與複合成份、口味)。

  Sweet potatoes and dragon fruits are rich in nutrients and carotenoids, anthocyanins, and betacyanins, and their texture and taste are popular among consumers. However, sweet potatoes and dragon fruits cannot withstand storage because of high moisture content and rich nutrition, which therefore affect their production, marketing, and development of the market. The research team has developed processed products with those two ingredients, sweet potatoes and dragon fruits, and the results are as follows.

  1. Sweet potato and dragon fruit drinks, puree, jam, dried fruit, and fillings.

  2. Iced roasted sweet potato, iced brick(sweet potato and dragon fruit).

  3. Sweet potato instant brewed powder(single & compound ingredients and flavor).
