  本研究以擠壓技術充分利用纖維渣粉末開發具機能性特色的擠壓產品,不僅能解決副產物問題,亦能增加農產品及其副產物的利用與附加價值,計畫使用的主原料為糙米,副原料為薑及柚子,以品質指標設定反應曲面法結果,透過單軸擠壓機將原料與副原料混合、擠壓成型,開發出具機能性特色的擠壓產品,產品除色澤外,風味也是重要的特性,薑與柚子具有精油成分,可以擠壓出具薑及柚子風味的酥脆產品,以符合現代人與銀髮族對飲食的要求。

  This study uses extrusion technique to make full use of fiber residue powder to develop extruded products with functional features, which can not only solve the by-product problem but also increase the utilization and added value of agricultural products and their by-products. The main material for this project is brown rice and the secondary material is ginger and pomelo. Using the results of the response surface method with quality indexes set, the main and secondary materials are mixed and extruded by a single-screw extruder to develop functional extruded products. In addition to color, the flavor is also an important characteristic of the product. Ginger and pomelo have essential oil ingredients that can extrude crispy products with ginger and pomelo flavors to meet the dietary requirements of modern people and elders.
